Pork

Scotts Field Rare Breed Free Range PigsMuch of Pelham & Talbot Pork is fully traceable, premium quality, British pork, however, our continuous quest to source the best local products has now resulted in us introducing own own range of Rare Breed Free Range Pork, from a breed indigenous to East Anglia, the Large Black.
Our succulent Scott's Field Pork surpasses all expectations and is available to buy now, both online and to our catering customers.
Thanks to the traditional, healthy outdoor lifestyle of the animals reared in the shadows of Oxburgh Hall near Swaffam, our pork has much more marbling giving it a sweet and succulent taste with crackling so crispy you will have rarely tasted better.


Bacon

Free Range Scott's Field Pigs
Using age old traditional dry curing techniques and the finest pork, we produce in house, the tastiest dry cure, sweet cure and smoked bacon for you to savour. Stunning wrapped around a succulent free range chicken breast, sprinkled over savoy cabbage or for the ultimate bacon sandwich.


Sausages


Only the best British pork is acceptable for our range of simply delicious hand made award winning sausages. Containing such succulent pork with a few choice seasonings you will rarely taste better.  
 

Beef


naturesPelham & Talbot beef is some of the finest British beef you will taste, much is produced from traditionally reared, grass-fed cattle which have been allowed to graze on lush meadows for most of the year and continued with a natural diet during the winter months. Then hung and aged, when fully matured, the tender meat is prepared by our team of skilled butchers, using both traditional and modern techniques to supply you with the tastiest finest beef.
It is our company policy to source our beef from local suppliers, but to maintain our high quality standards we also source from some of the most renowned beef producers within the UK.

Lamb

lambs1lambs2Sweet, succulent, delicate, just some of the words to describe our English spring lamb all sourced from the best English farms where the lamb is free to graze on mineral enriched grass. Hung for a number of days to increase the tenderness, whatever the cut, the taste will be superb.


Poultry & Game


deerMoist and full of flavour our free range chickens reared in East Anglia have enjoyed a natural diet whilst roaming free on pastureland giving them a fabulous firm texture, a supply of this delicious and versatile meat, no home should be without. Our plump duck breasts are often produced from the fabulous Gressingham Duck a favourite of top chefs, reared in East Anglia, perfect as the connoisseur’s choice. Our wonderful selection of game is mainly sourced from local estates and venison, available all year round, makes a very healthy alternative to beef with less fat and packed with essential oils.

Steve Childerhouse, Great Grove FarmNothing could be more perfect for the festive season than Geese and Turkeys from Great Grove Farm, hand reared by devoted farmer, Steve Childerhouse, these birds roam freely throughout the woods and countryside Great Grove Geesedeveloping  a natural plumpness free from additives. Dry plucked and hung to mature for a minimum of seven days their natural flavours develop in the traditional way. Either of these birds will sit supreme on any festive table.



Organic
Constantly striving to provide the best quality foods we are consdering introducing a range of Organic products. However, we do firmly believe that farms we currently buy our free range produce from, where the animlas welfare is paramount, produce some of the finest and tastiest meats possible without the need to be certified organic.
From time to time we may add an organic product or two.
                 
Seafood & Fish

Pelham & Talbot are perfectly located to supply you with the finest quality fish and seafood, with regular supplies of native crabs, lobsters and oysters expertly selected from the days catch, then professionally frozen to preserve the quality and delicate texture. Naturally low in fat and high in protein, why not try the firm white flesh of one of our healthiest hampers, or indulge yourself with our sweet Cromer Crabs caught just along the coast by our local fishermen.

In the hills and valleys of Verona with their bountiful supply of fine fresh produce, Silvia and Daniele produce their range of Treasures of Montecurto using age old techniques and ancient recipes. Montecurto Gelatine di VinoThese soft relish jellies are unique combined with seasoned cheeses, game, pork and hams. The sensation of sweetness is a great satisfaction to your palate, an unforgettable experience of taste that you will want to repeat time after time.






San Giacomo, Reggio Emilia

Our range of Artisanal Traditional Balsamic Vinegars are of the finest, produced by a consortium of around 15 producers proud of their traditional techniques resulting in Aceto Balsamico Tradizionale Di Reggio Emilia D.o.p. and Aceto Balsamico Tradizionale Di Modena D.o.p. As the discerning will confirm these vinegars are far superior and should not be confused or compared with the industrial product Aceto Balsamico Di Modena.
Only the finest Lambrussco and Trebbiano grapes are used, crushed and the must cooked by direct fire allowing the sugar to caramilise, combined with ageing in different wooden barrels of Oak, Mulberry, Chestnut, Cherry and Juniper to name but a few assist with the production of these exquisite vinegars.

THE STORY OF A SEED

It's the old farming story - seed goes in the ground, rain falls, the seed grows and the farmer harvests the crop.

Unlike many products in today's world, however, we can tell you the name of the man who planted the seed, the name and exact location of the field in which it was planted, how many inches of rain fell on the seed and even the names of the people who drove the tractors at harvest time (and the names of their wives and children)! We can trace every single bottle of Oleifera to the exact field in which it was grown because our harvested seed is kept in special seed bins at the grain store so we never lose sight of this provenance.

Because each bottle of our oil is taken from seed from an individual field, with its ownOleifera subtle differences in rainfall levels, temperature, sunshine and soil types, the exact look of the oil may vary very slightly from bottle to bottle, although because the seed variety is always the same, the quality of the oil always remains unaffected.

Cold pressed rapeseed oil contains just 6% saturated fat, where most olive oils have 14% and most sunflower oils around 10%.
Rapeseed oil also contains mono-unsaturated fats (59%) and poly unsaturated fats (30%) as well as Omega 3, 6, 9 (essential fatty acids) which are all known to help lower cholesterol.
