Rapeseed oil is now recognised as one of the healthiest culinary oils available but it is not just for health reasons that many people are becoming ‘rapeseed converts’.
It is ideally suited to a wide variety of uses and is considered by many to be preferable to olive oil which adds its own distinct Mediterranean taste to ingredients. Rapeseed oil has an extremely high smoke point (around 230 degrees C), which means it will cook at a higher temperature than other oils without the oil breaking down. This makes it ideal for obtaining a really golden brown finish to roast potatoes, vegetables and Yorkshire puddings.
It is also great for stir fries and shallow frying. When used as a cold oil in salad dressings, its subtle nutty flavour shines through, yet it is still mild enough to carry the taste of other ingredients without masking them. Oleifera is especially good for mayonnaise because of its glorious rich golden colour and the stability of the oil itself.
